The plain rice is taken with a special dish  'gulai ikan' , some fried vegetables and sambal.
The 'gulai ikan' is cooked with a special taste of sweet, sour and mild chilli flavour gravy giving a very unique and tasteful fish. It's a kind of replacement of fish curry without using any curry powder.
It's one of the favourite breakfast dish in Kelantan alongside with Nasi Kerabu.

RESEPI AYAM PERCIK




BAHAN-BAHAN MASAKAN
1 sekor ayam yang dipotong 4
1 1/2 cawan santan pekat
2 biji bawang putih
1 labu bwg besar
2 cm halia
2 batang serai
1 sudu kecil ketumbar
1/2 sudu kecil jintan putih
1/2 cawan tepung beras
sedikit air asam jawa@asam keping
sambal cili kering (optional... kalau nak kuah merah)
garam dan gula secukup rasa

CARA-CARA MEMASAK
Blend bawang, halia, serai, ketumbar dan jintan putih untuk dijadikan bahan perap.
Masukkan ayam  kedalam bahan perap selama 30 minit - 1 jam.
Masukkan ayam yang  diperap tadi ke dalam periuk.
Masukkan santan yang digaul dengan tepung beras dan bahan lain (air asam, garam, gula) ke dalam periuk.
Masak ayam selama ayam hampir setengah masak dan kuah naik bau harum bahan perapan.
Masukkan tepung beras untuk menjadikan kuah pekat selama 5 minit.
Angkat ayam bersama sedikit kuah dan masukkan kedalam oven.
Bakar dengan suhu 200 darjah selama 30 minit atau apabila ayam telah bertukar menjadi perang.
Masakkan lebihan bahan perap didalam periuk selama 15 minit.
Hidangkan ayam yang dicelup dengan kuah lebihan tadi...

LONTONG SAMBAL BILIS



Lontong is another popular dish in Malaysia. A complete set of Lontong is made of compressed rice (or known as cube rice)  then cut into small pieces. The rice is served with a mild creamy gravy of mixed vegetables with coconut milk and some turmeric flavour.
Our Lontong prepared at Pearl Food Stall is made of boiled rice in a bag until it is fully cooked, compressed, to form a solid mass. Once the compacted rice has cooled, it is cut into bite-sized pieces.
The gravy is made of mixing various selected vegetables like carrots, long beans, cabbage, vercimille and cooked in coconut milk with turmeric flavours, lemon grass and prawns. With a combination of some salt and sugar into the gravy, the gravy gives an irresistible taste and flavour.
Lontong is not complete without having some Sambal Bilis (Anchovy Chilli-based  Condiment).

How to consume:
Some people (especially those who are not from Kelantan) may find it confusing of the right way to enjoy the Nasi Kerabu as it has a number of supplementary ingredients to make it tasteful.
The rice needs to be properly and thoroughly mixed mith the Sambal Ikan. The Kuah Tumis needs to be added to the mix to enrich the flavour up to taste, then mix it more with the fresh salad. It will give unforgettable taste when taken with the grilled Tandoori Chicken.

Resepi Rojak Pasembor Pearl Street


Bahan2 (estimate utk 4 orang)

A - Cucur Udang

1 1/2 cwn tepung gandum
1/2 cwn udang (tak payah bubuh pun tak pe!)
2 biji bwg kecil (kat Cardiff guna 1/2 biji bwg besar - potong dadu)
1 sudu besar cili boh (ikut kesesuaian especially untuk anak2 yg masih kecil)
1 1/2 sudu kecil baking powder
garam secukup rasa
air secukupnya
optional - boleh masuk taugeh atau grated carrot

cara2- gaul semua bahan sama seperti nak buat cucur biasa atau cekodok, lepas tu goreng hingga kekuningan.

B - Cucur Kelapa (cucur ni keras skit.... kalau tak suka tak payah buat sebab ada yang kata keras)

1 cwn tepung gandum
3/4 cwn kelapa parut (kak Al guna dessicated coconut jer- pernah cuba kurangkan kelapa ni nak bagi lembut sikit)
garam secukup rasa
sedikit air

Cara2- utk buat yg ni....jgn curah air byk2 macam buat cucur. campur sikit2 dan uli dan bentuk macam pisang, lepas tu goreng sampai kekuningan.

Lain-lain bahan:
4 biji telur - rebus (hard-boiled) - kupas dan goreng sampai kuning
1 packet Seafood sticks (nak ganti sotong kalau k M'sia)
1 packet frankfurter (anak2 cukup suka yg ni)
3 biji kentang sederhana besar - rebus dengan kulit sampai masak (jgn potong2!), bila dah masak, goreng hingga kekuningan
4 keping tauhu - juga goreng sampai kekuningan
1/2 btg timun - hiris halus2
sedikit taugeh - celur dan toskan


Kuah Rojak

1 biji keledek  - rebus dan blend (kalau nak pekat boleh lebihkan keledek ni...)
2-3 bw kecil
1 sudu cili boh (atau mengikut kepedasan yang sesuai dengan citarasa)
1/2 cwn kacang tanah tumbuk
sedikit kicap lemak manis untuk menambahkan rasa lemak dan memberikan warna sedikit gelap)
minyak untuk menumis
air secukupnya
gula merah sesedap rasa (disyorkan guna dark brown sugar (muscavado) nak bagi manis - akan rasa lemak2 skit)
garam secukupnya

Cara2:
macam biasa, tumis bawang sehingga wangi, masukkan cili  - bila dah sebati dan wangi masukkan kacang dan keledek. 
masukkan air secukupnya, lepas tu garam dan gula serta kicap jika perlu.
masaklah sehingga pekat
akhir sekali rasalah ....bila dah sesuai tastenya, boleh diangkat dan dihidangkan dengan bahan2 di atas.

What makes Nasi Dagang special?


Nasi Dagang gives a better meaning when translated as Rice with single dish. To cook nasi dagang takes quite an effort, requires patience, quite tedious cooking tasks. It starts with soaking the rice together with right proportion of glutinous rice and basmati rice overnight to speed up cooking process as well as to give fluffy taste to the rice. The mix then get steamed with the mixture of coconut milk 2 to 3 times to give a creamy taste and flavour. On top of that, some fenugreek seeds with sliced onion and sliced ginger are added to the rice while steaming to give special  fragrance to the rice. Then some salt and sometimes a little bit of sugar is added to give the true taste of Nasi Dagang.

Nasi Dagang is consumed with any curry based dish, mostly fish curry or chicken curry. This curry is prepared with slight differences in the ingredients and spices used according to the practice in Kelantan or Terengganu. in Kelantan the dish is called Gulai Darat i.e mild curry blended with dried chilli paste and creamy coconut milk, thickened with kerisik and brown sugar and tamarind to give a special taste.
